Cinnamon Twists Recipe

There’s something special about baking at this time of year and when cinnamon is involved, your home instantly smells like Christmas.

I found a recipe on Pinterest and decided I had to try it. Oh and I had all the ingredients already, so there was that too.

Ingredients:

1/2 cup of Almond Flour

1/4 cup of Coconut flour

1/4 cup of Erythritol (sugar substitute)

1tsp baking powder

1 1/2 cups of grated mozzarella cheese

5 tbsp butter (room temperature)

1/2 tsp vanilla essence

2 tbsp melted butter

1 tbsp cinnamon and erythritol mixed

1 large egg

Method:

Preheat the oven to 180 degrees.

Combine the dry ingredients – almond and coconut flour, erythritol and baking powder.

In a large pot, melt the 5 tbsp of butter and mozzarella cheese together. Be careful not to burn it.

Once it’s melted, add the vanilla essence, egg and dry ingredients and mix it all together until a dough is formed.Don’t worry if you still have streaky cheese, remove it from the pot and pop it onto a silicone baking mat and knead it together. 

Roll/press it out.

Brush 1/2 of the melted butter on top

Sprinkle the cinnamon and erythritol mixture all over

Fold the dough over in half.

Cut into strips

Do the twist.. Hold each end of the strip and twist in the opposite direction. Place them onto the silicone mat and then brush them with the left over melted butter and sprinkle any left over cinnamon/erythritol over.

Pop them into the oven for 15 minutes until they’re golden.

Allow them to cool and serve with a fresh pot of coffee or tea.
