I don’t know what is going on, but I’ve been in this baking mood. Perhaps it’s that I have more time than usual being between home and hospital. I struggle to keep still, but don’t worry, I’m resting up. Perhaps it’s just that I simply need some comfort food.
What is better than melted chocolate oozing out of a phyllo pastry parcel when you’re feeling sore and uncomfortable?
Not much.
I know.
Besides… these little things make me happy and it’s important to keep spirits high.
Cut the phyllo pastry into squares |
Use good chocolate… I used a mixture of dark and milk chocolate. Beat 1 egg. The egg will be used to seal the parcel (almost like a glue) |
Place squares of chocolate onto the phyllo |
Fold into a parcel – almost like you’re wrapping a gift. Use the egg to stick everything closed. Make sure you brush the top with egg too. |
Pop them onto a well greased baking tray and bake for 15 minutes in a pre-heated oven of 200 degrees celsius or until they look golden and crispy. |
I suggest you serve them heated. Oh and I would have taken a photo of what they looked like afterwards, but… um… Bailey’s tummy 1; Camera 0.
PS. Today is Day 6 of Day 7 IV treatment and I am going back to work today – J-Loop and all! I’m excited to get back!
