After I posted the Christmas 2014 post yesterday, I had a few queries on the salad, so I thought I would share the simplest recipe ever.
This is my go to recipe over Christmas and during Summer. The combination may seem a bit strange, but it is absolutely delicious and all the flavours complement each other perfectly. If you’ve never tried feta and watermelon, you’re missing out on a sweet and salty/tangy world. You can either plate each salad or cut it up in one big bowl.
Ingredients:
Watermelon
Feta
Olives (I love the Kalamata Olives)
Rocket
Parm Ham
Ingredients for the honey mustard dressing:
1 tablespoon of white wine vinegar
1 minced clove of garlic (optional)
1 and a 1/2 teaspoons of Dijon mustard
1/2 a teaspoon of honey
A pinch of salt
1/3 cup of olive oil
Method:
Slice the watermelon up
Curl the parma ham into roses and place on top of the watermelon
Crumble feta all over
Place some fresh rocket on top
Add the olives
Drizzle with honey mustard dressing
It is a really light meal, so I’d suggest it as a starter or increase the quantity for a meal. It’s best enjoyed on a hot summers day with a chilled glass of white wine. Bliss.
