Pancake flips

I have had a craving for pancakes for over 2 weeks. I have really tried to not give in, but I’ve realised that with some cravings that persist, sometimes you just have to get them out of your system.

My boyfriend is dying from man flu sick with flu at the moment, so besides the chicken noodle soup I’ve been giving him, I thought I’d make pancakes. Finally.

I gathered all the ingredients and got busy in his kitchen.

He even got involved in the cinnamon sprinkling, until I sent him back to bed with a variety of pancakes and a grin on his face.

I didn’t feel like fussing, so I bough the Pancake Easy Mix. All you need is one extra large egg, 2 tsp oil and water.

In one bowl I mixed the oil, water and egg together and in another bowl, I sifted the flour.

I added the liquid to the flour gradually and whisked it all together until there were no lumps.

I always find it easier to pour the batter into a jug so that it is easier to pour into the frying pan.

Lightly grease the pan with oil. I actually dab some oil onto a piece of paper towel and wipe that over the pan to lightly coat the pan. I don’t like pans to be too oily. Make sure the pan is hot, but not too hot. You don’t want your pancakes to burn.

The way to tell when pancakes are ready to flip is to see them bubble and watch the sides lift slightly…

Turn it over and then keep checking to see that both sides are slightly golden.

Side Note: In order to flip pancakes, you must have the goofiest grin on your face. It helps with the flip action.


As soon as your pancake is golden, remove it to a plate and go wild with your fillings. I was feeling like something sweet.

Our toppings were:

Cinnamon, sugar and lemon juice.

Caramel and banana

Nutella and banana

Nutella and peanut butter

Um… I didn’t have every filling, FYI.
