I absolutely love making these because they are so easy, even though they look complicated. They taste absolutely delicious.
Ingredients:
Chicken Breasts
Brie Cheese
Nectarines (If these aren’t in season, you can use any other fruit. I’ve also made it with grapes, peaches, cranberries or pears.)
Bacon
Toothpicks (I couldn’t find mine, so I improvised with kebab sticks.)
Method:
Pre-heat the oven to 180C or 365F.
Use meat tenderiser to flatten the chicken breasts. You can place a piece of cling wrap over to prevent any mess.
Cut your nectarine and Brie cheese into slices…
Place pieces of Brie in the centre of the breast.
Place the fruit on top of the Brie Cheese.
Roll the breast up and secure it with a toothpick (or kebab stick)
Take a piece of bacon and wrap it around the stuffed chicken breast, securing it onto the toothpicks/ kebab sticks.
Place on a Baking tray with a little olive oil to prevent them from sticking.
Bake in the oven for twenty minutes or until the chicken is juicy and white.
After an extra 5 minutes (depending if they need it or not) serve with steamed broccoli or other steamed vegetables.
