My hubby came home with chicken breasts from our local supermarket here in Greece. These things were MASSIVE. Turns out, they’re not chicken breasts, but rather Rooster breasts and rather tasty! I can’t exactly call this recipe: Baked Feta Rooster, can I? Not sure it sounds appetising – you’d think it was fowl play 😉
I’d usually just grill them, but I was intimidated by how big they looked, so I looked online for a baked chicken recipe and found a few… but we were missing half the ingredients. I drew inspiration from some recipes methods, and went into our kitchen to draw ingredient inspiration from what we had.
We had big, juicy tomatoes, a whole tub of feta, some cream and some thyme. Perfect.
Ingredients:
- 6 x Skinless chicken/rooster breasts
- 3-5 x red tomatoes (peeled or unpeeled and chopped)
- Cream
- 2 blocks of feta
- Salt and Pepper
- Thyme (fresh or dried)
- Olive oil
Method:
Season your chicken breasts with salt and pepper and pan fry them, to brown them. They don’t need to be cooked through. Just brown them to seal in the flavour.


Preheat your oven to 200-220C. You want a really hot oven to bake at a high heat. This recipe uses a higher heat which allows the tomatoes and feta to soften and develop their flavour, along side the chicken. Here’s the best part… because we are at a higher heat than we usually bake chicken at, it may bake more quickly than you are used to. The chicken can be done in as little as 15-20 minutes, which is amazing for a busy weeknight! Don’t overcook the chicken! Since we are cooking at a higher temperature, make sure you check the chicken often and don’t over cook it, which can result in dry or tough chicken.
In an oven dish, place your chicken breasts, chopped tomatoes, thyme and the 2 blocks of feta on top.




Pour the left over olive oil you used to brown the chicken over, and apply a bit more olive oil if needed.

Pop in the oven and keep checking the chicken.
After 15-20 minutes, take it out the oven. Remove the chicken pieces and mash up the feta, pour some cream in to create a delicious creamy, cheesy tomato sauce.




Return the chicken to the dish with the sauce and let it rest for a few minutes.

Serve on a bed of spinach or with some cauliflower rice or a garden salad and a chilled glass of wine.


Dinner is served and delicious! Enjoy.
