Sunday Roast

Sunday Roast. Just those 2 words evoke hearty, home-cooked deliciousness, aromas that waft, a set dining table ready to welcome good friends and family, chilled wine and laughter.I’ve been wanting to make Roast Pork with crackling for ages, and I decided that instead of waiting for time to become available, I’d just set a time and make it available!

Sox and I invited Kim, Marc, little Sloane, Lisa, Danny, Ryan and Sox’s mom Dimitra for the Sunday Roast.It was my first time doing Roast Pork and crackling, which was probably a silly idea when asking friends round. I figured that if it all went pear shaped, we’d order take-out and laugh about it. Luckily, that didn’t happen.

I made my own apple sauce since all the store ready ones are full of extra sugar. Peel amd slice apples, add a pinch of nutmeg, a big tablespoon of cinnamon, a little lemon juice and 1 and a half cups of water. Bring it to the boil, then let it simmer to reduce. The apple will soften completely and just stirring will mash it all up, but if you want it extra smooth, blend it.Apples, cinnamon, nutmeg, lemon and water.jpgApple Sauce 2Apple sauceHome made apple sauceFor the Roast Pork and Crackling I got 2 Pork Loins. I sliced the fat down to the meat (not cutting into the meat) about a finger width apart. Pork LoinRub coconut oil and salt into the fat and the slits. The sudden realisation made me go cold! Luckily, Lis was very understanding and said she’d pick up a Roast Chicken… I’d love to say that I am such a Domestic Goddess that I made Roast Pork and Roast Chicken, but that’s the disclaimer…Roast Chicken and Pork

      Hey Robynne, I actually shared it on the 3-way skype dinner post 😉 There is also a Banting Chocolate Mousse powder that just needs to be added to cream and a drop of vanilla essence, for those really lazy days 😉

    I’ve never actually thought of making my own apple sauce, but that looks super easy and delicious. Actually, everything looks just so yummy!
